I'll be honest with you. Pineapple. On a burger. I see the eyebrows going up. I see the angry email being drafted. Save it. Pineapple on a burger is GENIUS, it's a masterclass, it's the greatest fruit-meat handshake in the history of food, and the Hawaiians figured it out while the rest of us were still putting iceberg lettuce on things and calling it cuisine. They were AHEAD of us. Way ahead. We are finally catching up.

The best Hawaiian burger I ever had was at a tiki shack on the north shore of Oahu — sand on the floor, one guy at the grill, no menu, you got what he gave you. He handed me a burger on a paper plate and just stared at me. I took a bite. He nodded once. He had won. The second-best was at a roadside stand outside Albuquerque, of all places, where the cook had never been to Hawaii but loved the IDEA of Hawaii so much that the burger came out better than anything I had on actual Hawaii. Pineapple was grilled, teriyaki was glossy, the patty had a crust like a knight's armor. Believe me.

This one — Bigly's — combines both. Grilled fresh pineapple. Homemade teriyaki glaze that you make in five minutes and that ruins the bottled stuff for you forever. A patty with a real seared crust, not the gray steamed disk most chefs serve and call medium. Sweet roll, toasted, melted Swiss, crisp bacon, red onion for that little sharp bite at the end. Every flavor category is on this burger. Sweet, salty, smoky, juicy, sharp, tangy. The food chemists would call it 'complete.' I call it dinner.

Ingredients

  • 1.5 lbground beef chuck, 80/20
  • 4fresh pineapple rings, 1/2-inch thick(FRESH, never canned, the canned stuff is wet sadness)
  • 8 slicesthick-cut bacon
  • 4Swiss cheese slices
  • 1/3 cupsoy sauce
  • 1/4 cup, packedbrown sugar
  • 2 tbsprice vinegar
  • 1 tbspfresh ginger, grated
  • 2 clovesgarlic, minced
  • 1 tspcornstarch
  • 1 tbspwater
  • 4Hawaiian sweet rolls (large) or sweet brioche buns
  • 4butter lettuce leaves
  • 1/4red onion, thinly sliced
  • 1 tbspvegetable oil
  • to tastekosher salt and pepper

    Make the teriyaki glaze: in a small saucepan, combine soy sauce, brown sugar, rice vinegar, ginger, and garlic. Bring to a simmer over medium heat. Whisk the cornstarch and water together and add to the pan. Simmer 2-3 minutes until thickened to a glaze. Remove from heat.

    Cook the bacon in a skillet over medium heat until crisp, about 8 minutes. Transfer to a paper-towel-lined plate. Reserve.

    Heat a grill pan or cast iron skillet over high heat. Brush pineapple rings lightly with oil and grill 2-3 minutes per side, until charred lines form and the fruit is just softened. Set aside.

    Divide ground beef into 4 equal portions and form into patties slightly wider than the buns. Press a dimple in the center of each. Season generously with salt and pepper.

    Add 1 tbsp oil to the same skillet over high heat. Sear patties 3 minutes on the first side. Flip, brush the cooked side with teriyaki glaze, top with a slice of Swiss, and cook another 2-3 minutes for medium. Cover briefly to melt the cheese.

    Split and lightly toast the Hawaiian rolls in the pan, cut-side down, until golden.

    Build the burger: bottom bun, lettuce, patty with melted Swiss, grilled pineapple ring, 2 strips of bacon, a few rings of red onion, a drizzle of extra teriyaki glaze, top bun. Serve immediately.
