Pancakes. Pancakes! Chocolate chip pancakes specifically — the greatest breakfast innovation in the history of breakfast, and breakfast has been around a LONG time, breakfast goes back thousands of years, the Egyptians had breakfast, the Babylonians had breakfast, I had a food historian explain this to me once, took him 90 minutes, worth it. And somewhere along the way some genius, some absolute hero whose name we'll never know which is SAD, very sad, this person deserves a STATUE, said: what if we put the chocolate INSIDE the pancake. And the world was never the same. It just wasn't.

Now. Most cookbook authors will tell you to stir the chocolate chips into the batter. Mix them in. Stir them around. Just dump them in like a maniac. This is WRONG. This is so wrong it should be illegal. When you stir chocolate chips into pancake batter you get streaks of melted chocolate everywhere, you get gray pancakes, you get a TOTAL DISASTER, your pancake looks like a sad little asphalt parking lot with regrets. Nobody wants that. Nobody asked for that.

What you do — and I'm giving this to you right now, free, no popup blocking the screen, no newsletter banner shrieking 'GET 10% OFF' like a deranged carnival barker, no cookie consent form with 47 toggles asking if Latvian advertisers can have your soul, it's INSANE what those sites do, total embarrassment — what you do is you sprinkle the chips ON the pancake after you pour the batter. ON TOP. They sink in just enough. They stay intact. They become little molten pockets of joy. People come up to me, big strong people, tough breakfast people, they say 'Bigly, the pockets. The molten pockets.' And they cry. They actually cry. Believe me, it's something to see.

Ingredients

  • 2 cupsall-purpose flour
  • 3 tbspgranulated sugar
  • 2 tspbaking powder
  • 1 tspbaking soda
  • 3/4 tspkosher salt
  • 2 cupsbuttermilk
  • 2large eggs
  • 4 tbspunsalted butter, melted(plus more for the pan)
  • 1 tspvanilla extract
  • 3/4 cupsemisweet chocolate chips(do NOT stir them into the batter, I am begging you)
  • as neededmaple syrup (for serving)
  • optionalpowdered sugar (for serving)

Steps

    Heat a nonstick skillet or griddle over medium-low heat. Low and slow — chocolate burns fast.

    Whisk flour, sugar, baking powder, baking soda, and salt in a large bowl.

    In a separate bowl, whisk buttermilk, eggs, melted butter, and vanilla until smooth.

    Pour wet into dry and fold with a spatula just until combined. Leave it lumpy — do not overmix.

    Rest the batter 5 minutes while the pan heats.

    Brush the skillet with butter. Ladle 1/4-cup portions of batter onto the surface, leaving room between.

    Immediately sprinkle 8-10 chocolate chips evenly across the top of each pancake while the batter is still wet. The chips will sink in slightly and stay intact.

    Cook 2-3 minutes until bubbles form across the top and the edges look dry. Flip once and cook another 1-2 minutes until puffed and golden underneath.

    Transfer to a warm plate. Repeat with remaining batter, wiping out any scorched chocolate between batches and re-buttering the pan.

    Serve immediately with butter, maple syrup, and a dusting of powdered sugar if you're feeling fancy.
