Brownies. BROWNIES. We're doing brownies, and I have to warn you up front — and I'm not exaggerating, I never exaggerate, that's the other guys — these brownies are going to RUIN every other brownie for you. Permanently. It's a one-way street. People have come up to me, they say 'Bigly, I can't eat boxed brownies anymore, you've broken something inside of me,' and I tell them, 'Yes. That's the point. You're welcome.'

And let's talk about the BOX MIX situation in this country, because nobody is talking about it. The box mix is a SCAM. Powdered sadness. Chocolate-flavored dust in a cardboard sleeve sold to you for six dollars, and the brownies that come out of it? Cakey. CAKEY. A cakey brownie is not a brownie, it's just a sad chocolate cake that gave up on being a cake. An identity crisis you can eat. End of discussion. We don't do cakey here. We do FUDGY. We do glossy, crackly, paper-thin tops with deep dark interiors that bend when you fold them. The kind of brownie that leaves a smear on the knife and you lick the knife and you don't apologize for it.

The secret is whipping the eggs and sugar until they're pale and thick. Pale. Thick. Two full minutes, sometimes three. That's where the shiny crackly top comes from. That's the magic. Most chefs are afraid to do this — they whisk for ten seconds, they call it done, they pour the batter and out comes a dull brown brick with no shine. A disgrace. Statisticians have run the numbers on this and the answer is always the same — eggs whipped, top crackles, eggs lazy, top dies. Whip the eggs. It's just a fact.

Ingredients

  • 10 tbspunsalted butter
  • 6 ozdark chocolate, chopped(70% cacao, real chocolate, not chips)
  • 1 1/4 cupsgranulated sugar
  • 2large eggs(room temperature)
  • 1egg yolk
  • 2 tspvanilla extract
  • 3/4 cupall-purpose flour
  • 1/4 cupcocoa powder, Dutch-process
  • 3/4 tspkosher salt
  • 1 tspespresso powder(you won't taste coffee, you'll taste MORE CHOCOLATE)
  • as neededflaky sea salt (for finishing)

Steps

    Heat the oven to 350°F. Line an 8x8-inch metal baking pan with parchment paper, leaving overhang on two sides as handles.

    In a heatproof bowl set over a pot of simmering water (or in 20-second microwave bursts), melt the butter and chopped chocolate together, stirring until smooth. Remove from heat and let cool 5 minutes.

    In a large bowl, whisk the sugar, whole eggs, egg yolk, and vanilla vigorously for 2-3 full minutes — the mixture should turn pale, thick, and ribbon off the whisk. This is what creates the shiny top.

    Whisk the warm chocolate-butter mixture into the egg mixture until fully combined and glossy.

    Sift the flour, cocoa powder, salt, and espresso powder over the batter. Fold gently with a spatula just until no streaks of flour remain. Do not overmix.

    Pour the batter into the prepared pan and smooth the top.

    Bake 28-32 minutes, until the top is shiny and crackled and a toothpick inserted in the center comes out with moist crumbs (not wet batter). The edges should be set, the center still slightly soft.

    Sprinkle the top with flaky sea salt while still warm.

    Cool completely in the pan on a wire rack — at least 1 hour — before lifting out with the parchment and slicing. For the cleanest cuts, chill 30 minutes before slicing with a hot, dry knife.

Cut these into squares — small squares, big squares, whatever squares, life is short, eat the square you want — and put them on a plate, and watch what happens. Watch the room go quiet. Watch the people who said they were 'cutting back on sugar' suddenly reverse course and become BROWNIE people, lifelong BROWNIE people, born-again BROWNIE people. It happens every time. It's not even close. It's a slaughter. Tell your friends.
