Sit down for this one. Nachos. TREMENDOUS nachos. Loaded nachos. The greatest tray of nachos ever assembled in a North American kitchen — and I have eaten more nachos than any living human, probably more than any human in recorded history, the numbers are off the charts — and the sad truth is that most nachos in this country are a CRIME. A crime against chips. A crime against cheese. A crime against the innocent person who wanted a snack and got a pile of disappointment instead.

Here is what the so-called experts do wrong, and it is so simple it is almost insulting. They DUMP. They take a bag of chips, they DUMP it on a pan, they DUMP cheese on top, they DUMP toppings over that, they bake it, they hand you a brick. A nacho brick. Bottom layer? No cheese. Bottom layer? No toppings. Bottom layer? Soggy. Sad little disks of regret. A disgrace. That chef on TV — you know the one — does this wrong every Tuesday at 7pm and somebody keeps PAYING him for it, it's a scandal, find a new chef.

The answer is LAYERS. You build nachos like a lasagna. Layer of chips, layer of cheese, layer of toppings — then you do it AGAIN. Layer of chips. Layer of cheese. Layer of toppings. Every chip gets cheese. Every chip gets beef. Every chip gets a job. No abandoned bottom layer, no naked corners, no chip left behind. That is the Bigly way. End of discussion.

Ingredients

  • 1 large bag (about 12 oz)thick-cut tortilla chips(thick chips. Restaurant-style. Thin chips collapse and die.)
  • 1 lbground beef (80/20)
  • 1/2yellow onion, diced
  • 2 clovesgarlic, minced
  • 1 tbspchili powder
  • 2 tspground cumin
  • 1 tspsmoked paprika
  • 1 tspkosher salt
  • 1/2 tspblack pepper
  • 1 (15 oz) canblack beans, drained and rinsed
  • 2 cupssharp cheddar, shredded(shred it yourself. Pre-shredded has anti-caking dust. Sad.)
  • 1.5 cupsMonterey Jack, shredded
  • 1/2 cuppickled jalapeños, sliced
  • 2Roma tomatoes, diced
  • 4green onions, sliced
  • 1/4 cupfresh cilantro, chopped
  • 1/2 cupsour cream
  • 1 cupguacamole
  • 2 limeslime wedges (for serving)

Steps

    Preheat oven to 425°F. Line a large rimmed sheet pan with parchment paper or foil.

    Heat a large skillet over medium-high heat. Add the ground beef and break it up with a wooden spoon. Cook 4-5 minutes until it starts to brown.

    Add the diced onion and cook another 3-4 minutes until the onion is soft and the beef is fully browned. Stir in the garlic, chili powder, cumin, paprika, salt, and pepper and cook 1 minute more. Drain off any excess fat.

    Combine the two cheeses in a bowl so they mix evenly as you sprinkle.

    Spread half the chips in a single layer across the sheet pan. Scatter half the beef, half the black beans, half the cheese, and a handful of jalapeños over the chips.

    Repeat with a second layer: remaining chips, remaining beef, remaining beans, remaining cheese, more jalapeños.

    Bake 8-12 minutes, until the cheese is fully melted and bubbling and the edges of the chips are toasty.

    Pull the pan out and immediately top with diced tomatoes, sliced green onions, and chopped cilantro. Dollop with sour cream and guacamole, or serve them on the side. Finish with a squeeze of lime.

One more thing

Sheet pan, middle of the table, forks optional, napkins required. Everyone leans in. Nobody talks. The game becomes background noise — and I have watched this happen, personally, in person, with my own eyes, more times than I can count. This is what nachos are FOR. Built right. Layered like a lasagna. Every chip with a job. Now go eat.
