Sit down for this one. Pinwheels. TREMENDOUS pinwheels. The greatest pinwheels assembled by human hands — and I've assembled a LOT of pinwheels, more pinwheels than the people who invented pinwheels, which by the way nobody knows who that was, the historians can't agree, the food historians I talk to (and I talk to food historians, very smart people, the smartest, one of them has a PhD and explained the entire history of cold appetizers to me one rainy afternoon) admitted to me, off the record, that the pinwheel origin story is a complete mystery. Doesn't matter. I've perfected it. Game over.

Here's what nobody tells you. Most people — and the cookbook authors won't say it but it's true — will tell you to slap some cream cheese on a tortilla, throw in some sad lettuce, roll it up, and call it a pinwheel. THAT IS NOT A PINWHEEL. That is a sad burrito with identity issues. A real pinwheel has STRUCTURE. A real pinwheel has LAYERS. A real pinwheel, when you sliced cross-section it, looks like a tiny stained-glass window made of food. Cookbook authors hate this trick. They hate that I'm telling you. Too bad.

Mine? Bigly art. Cream cheese seasoned correctly — and most people, weak people, just smear plain cream cheese, which is a CRIME against the dairy aisle — then turkey, then spinach, then peppers, rolled tight, chilled hard, sliced into beautiful little spirals you can stack on a plate and watch your guests' eyes go wide. I've seen it. Tough guys, big strong men, they look at a tray of these pinwheels and they whisper. They WHISPER. Because they're in the presence of greatness. End of discussion.

Ingredients

  • 8 ozcream cheese, softened(actually softened, not 'I microwaved it for 12 seconds')
  • 2 tbspfresh dill, finely chopped
  • 2 tbspfresh chives, finely chopped
  • 1/2 tspgarlic powder
  • 1 tsplemon zest
  • 1/2 tspkosher salt
  • 1/2 tspblack pepper
  • 4large flour tortillas (10-inch)(fresh, soft, not the ones that crack like a windshield)
  • 1/2 lbthin-sliced deli turkey breast
  • 2 cupsbaby spinach leaves(patted very dry, soggy is the enemy)
  • 1/2 cuproasted red peppers, drained and thinly sliced
  • 3/4 cupshredded sharp cheddar

Steps

    In a medium bowl, beat together the cream cheese, dill, chives, garlic powder, lemon zest, salt, and pepper until smooth and uniform.

    Lay one tortilla flat on a clean work surface. Spread about 1/4 of the cream cheese mixture in a thin, even layer all the way to the edges.

    Arrange a layer of turkey slices over the cream cheese, leaving a 1-inch border along the far edge of the tortilla.

    Scatter a layer of spinach leaves over the turkey, then a sparse layer of red pepper strips, then a sprinkle of shredded cheddar.

    Starting from the edge closest to you, roll the tortilla up tight, keeping the fillings tucked in as you go. Press the bare far edge to seal.

    Repeat with the remaining tortillas and fillings to make 4 rolls.

    Wrap each roll snugly in plastic wrap and refrigerate at least 1 hour (and up to 8). This chilling step is non-negotiable — it firms everything up so the slices hold together.

    Unwrap and trim 1/2 inch off each end (cook's snack). Slice each roll crosswise into 1-inch pinwheels with a sharp serrated knife, using a gentle sawing motion.

    Arrange cut-side up on a platter and serve cold.

These pinwheels travel. They go places. You bring these to a baby shower, a tailgate, an office potluck — wherever sad food usually goes to die — and they will be GONE before the deviled eggs even arrive. People will fight over them.
