Sit. Pour yourself a coffee. We're doing this right. The burrito bowl — the assembled-bowl-in-a-paper-container situation that has taken over America — has become a CRIME SCENE in most kitchens that sell it. A scoop of cold rice that's been sitting under a heat lamp since the previous administration. A ladle of beans with the personality of a tin can. A wilted leaf of something green that has clearly given up on life. And the wooden fork — and I mention this because it deserves to be mentioned — snaps in half the moment you try to use it. The whole thing is wet sadness on a plate. A disgrace to the bowl format.
We are fixing this today. The Bigly bowl beats every fast-casual chain in the country, and it's not even close — it's a slaughter. Cilantro lime rice that actually tastes like the words on the label. Black beans warmed with smoked paprika and a little cumin until they smell like a campfire. Corn that has been CHARRED, not boiled, not steamed, CHARRED, with black spots and crunch and SOUL. A fajita pepper situation that has been kissed by a screaming-hot cast iron. Fresh pico. A homemade chipotle crema that will make a grown adult weep into their dinner. And on top — a quarter of a perfectly ripe avocado, because in this kitchen the guacamole tax does not exist. It's our house. The guac is free.
Now — and forget what the other so-called experts say — the trick to a tremendous bowl is not the ingredients. It's the LAYERING. Every component gets seasoned ON ITS OWN. The rice gets its lime. The beans get their cumin. The corn gets its salt and char. The peppers get their chili powder. You build flavor in STAGES, like a great painter — layers, depth, contrast — instead of one sad pile of beige stuff with hot sauce dumped over the top to hide the crimes. A guy named Ramón taught me this in a parking lot in New Mexico. He didn't speak much. He just nodded and handed me a bowl that rearranged my central nervous system. This one is my best attempt to honor what he did to me that day. It's close. It's very close. Take my word for it.
Ingredients
- 1.5 cupslong-grain white rice
- 2.25 cupswater
- 1 tsp, plus more to tastekosher salt
- 1/2 cup, dividedfresh cilantro, chopped
- 3 tbsp, dividedlime juice, fresh(fresh, always fresh, never bottled)
- 4 tbsp, dividedolive oil
- two 15 oz canscanned black beans, drained and rinsed
- 1 tspsmoked paprika
- 1.5 tsp, dividedground cumin
- 1 tspgarlic powder
- 1.5 cupsfrozen corn (or fresh)
- 1red bell pepper, sliced
- 1yellow bell pepper, sliced
- 1 mediumred onion, sliced (plus 1/4 cup finely diced for pico)
- 1 tspchili powder
- 3roma tomatoes, diced
- 1jalapeño, finely diced, seeds optional
- 1/2 cupsour cream
- 1-2 peppers, plus 1 tsp saucechipotle in adobo, minced
- 2ripe avocados, sliced
- 1 cupshredded sharp cheddar or Monterey jack
- 1 limelime wedges (for serving)

Cook the rice: rinse rice until water runs mostly clear. Combine with water and 1 tsp salt in a saucepan. Bring to a boil, reduce to lowest heat, cover, and cook 18 minutes. Remove from heat and rest, covered, 10 minutes. Fluff with a fork, then stir in 1/4 cup cilantro and 1.5 tbsp lime juice.

Make the black beans: heat 1 tbsp olive oil in a saucepan over medium heat. Add drained beans, smoked paprika, 1 tsp cumin, garlic powder, and 1/4 cup water. Simmer 6-8 minutes, mashing a few beans with a spoon to thicken the liquid. Season with salt.

Char the corn: heat a dry cast iron skillet over high heat until smoking. Add corn in a single layer and DO NOT stir for 3 minutes. Toss, then char another 2 minutes until blackened in spots. Transfer to a bowl. Toss with 1/4 cup diced red onion, 1.5 tbsp lime juice, a pinch of salt, and 2 tbsp cilantro.

Cook the fajita peppers: in the same skillet, heat 2 tbsp olive oil over high heat. Add sliced bell peppers and remaining red onion (the sliced portion). Sprinkle with chili powder, remaining 1/2 tsp cumin, and a big pinch of salt. Cook 6-8 minutes, tossing occasionally, until softened and lightly charred on the edges.

Make the pico: combine diced tomatoes, jalapeño, remaining cilantro, a squeeze of lime, and a pinch of salt in a small bowl. Set aside to mingle.

Make the chipotle crema: whisk sour cream with minced chipotle, adobo sauce, a squeeze of lime, and a pinch of salt. Thin with 1-2 tsp water if needed.

Build the bowls: scoop cilantro lime rice into the bottom of 4 bowls. Top each with a section of black beans, charred corn salsa, fajita peppers, fresh pico, sliced avocado, and a generous sprinkle of cheese.

Drizzle with chipotle crema. Serve with lime wedges and extra cilantro.
