Folks. FOLKS. We need to talk about Hamburger Helper. The boxed stuff. The little glove guy. Cute mascot, I'll give him that — not as cute as me, nobody is as cute as me, the combover is iconic, people stop me on the street, they say 'Bigly, the hair, the HAIR' — but cute. Cute little glove. The problem is what's INSIDE the box. Powdered cheese dust. Dehydrated noodles that taste like a packing peanut. Sodium levels NASA uses to preserve astronauts. It's a tragedy. A boxed tragedy.

So we're making it from scratch. From SCRATCH. And it takes about the same amount of time as the box, which nobody tells you, the box people don't WANT you to know, they'd lose their whole business model — and it tastes a thousand percent better. A THOUSAND. I had people taste this side by side with the box. Big strong men. Tough men. Construction workers. They cried. One of them whispered 'the glove lied to me.' True story. Probably.

The secret — and I'm giving this to you for free, no popup, no 'subscribe to my newsletter for 47 emails a week,' no cookie banner asking permission for 312 partners to track your every movement which is INSANE and somebody should look into it — the secret is browning the beef PROPERLY, using real cheese, and finishing with a knob of butter at the end. A knob. Of butter. The French call it 'monter au beurre,' I call it 'doing it right.' Either way, it's the move. End of discussion.

Ingredients

  • 1 lbground beef, 80/20(90/10 is for cowards, the fat is the flavor)
  • 1 mediumyellow onion, diced
  • 3 clovesgarlic, minced
  • 2 tbsptomato paste
  • 2 tbspall-purpose flour
  • 1 tspsmoked paprika
  • 1 tspgarlic powder
  • 1 tsponion powder
  • 1/2 tspmustard powder
  • 1.5 tspkosher salt
  • 1 tspblack pepper
  • 2.5 cupsbeef broth
  • 1 cupwhole milk
  • 2 cupselbow macaroni, dry
  • 2 cupssharp cheddar, shredded(shred it yourself, bagged cheese has anti-caking dust on it, sad)
  • 2 tbspunsalted butter
  • 2 tbspfresh parsley, chopped(optional, mostly decorative, I respect it)

Steps

    Heat a 12-inch skillet over medium-high. Add the ground beef and break it apart with a wooden spoon. Cook 5-6 minutes until well browned. Do not drain — that fat is doing a job.

    Add the diced onion and cook 3 minutes until softened. Stir in the garlic and tomato paste and cook another minute until the paste darkens.

    Sprinkle the flour, paprika, garlic powder, onion powder, mustard powder, salt, and pepper over the beef. Stir to coat and cook 1 minute to toast the spices.

    Pour in the beef broth and milk, scraping the bottom of the pan to release the browned bits. Bring to a simmer.

    Stir in the dry macaroni. Cover and reduce heat to medium-low. Simmer 12-14 minutes, stirring every few minutes, until the pasta is tender and the sauce has thickened.

    Remove from heat. Stir in the cheddar one handful at a time until melted and smooth. Stir in the butter until glossy.

    Taste and adjust salt. Top with parsley if using. Serve immediately.

One more thing

That's it. One pan. Twenty-five minutes. A dinner that makes the boxed version look like prison food, which by the way prison food has gotten WAY too good lately, somebody should look into it — and you've spent maybe four dollars more than the box. Four dollars. For real cheese. For real beef. For dignity. Your kids will eat it. Your spouse will eat it. The dog will sit by the table and stare with such intensity you'll feel JUDGED. That's how you know it's working. That's how you know it's tremendous. Believe me.
